“I had been completing a lesson in a Head Start classroom about beets from the “Harvest for Healthy Kids” Curriculum.  After our circle time, I provided a food tasting of beets prepared with a lemon-dill dressing.  One of the teachers really enjoyed the recipe, and I explained to her that beets are good for high blood pressure. She was especially interested in hearing this nutritional information as her husband had high blood pressure.  She told me that he didn’t like pickled beets but felt as though he would enjoy the ones I had served.  The next time I visited that classroom, which was about six weeks later, the teacher told me that her husband was eating beets several times a week and had seen a drop in his blood pressure. She was excited to explore different and healthy ways to prepare beets. This story shows our program’s reach not only with children and educators during our direct education experiences, but also how this information is shared within homes beyond the school doors to improve the health and wellness within the community.”
